Maharashtrian style chicken curry

Ingredients:

Chicken - 1/2 kg
Onion - 1 medium size
Tomato - 2 nos
Dry coconut - 1/2 cup grated
Garlic - 3-4 cloves
Ginger - 1 inch
Cinemon - 1 inch piece
Cloves - 2-3 nos
Black peper - 3-4 nos
Green cardamom - 2 nos
Coriander seeds - 1 spoon
Turmeric - 1 tsp
Red chilly powder - 2 tsp
Coriander powder - 1 tsp
Chicken masala - 1 tsp
Garam masala - 1/2 tsp
Oil - 3-4 tblsps
Salt as per taste
Corinder for garnish

Recipe:

1. Wash chicken thorughky and cut it into medium size pieces.
2. Grind all below ingredients (as shown in picture) in a smooth paste. 




3. Heat a pan. Add 3-4 tblsps of oil. Once the oil is hot add the grounded masala in it.
4. Saute this masala till it starts to ooze out some oil.
5. Add turmeric, red chilly powder, chicken masala, garam masala, coriander powder in it and mix well.
6. Add cut chicken pieces and salt as per taste.
7. Cover the pan with flat plate and pour some water on that plate.
8. After 5 minutes, remove the cover. By this time chicken would have oozeed out some oil.
9. Add another 1-2 cup of water as per your need. Cover it and let it cook for 10 minutes.
10. After 10 minutes, chicken will get cooked. Garnish it with coriander.
11. Serve hot chicken masala with jeera rice, plain basmati rice and bhakari.

Cookie Cup

Ingredients:


Refined Flour - 2 1/4 cup
Butter - 1/2 cup
White sugar - 1/2 cup
Brown sugar - 1/2 cup
Egg - 1 no
Vanilla essence - 2-3 drops
Chocolate chips - 1/2 cup
Cooking chocolate - 1/2 cup
Salt - one pinch
Baking glass mould(s).


Recipe:

1. Take a bowl. Add butter, white sugar and brown sugar to it. Beat the mixture with electric bitter.



2. Once the sugar is mixed well, add an egg. Beat well.




3. Add refined flour, a pinch of salt and choco chips. Make a dough from it and place it in the refrigerator for 1-2 hours.



 
4. Meanwhile grease the cup mould with butter.





5. After 1-2 hrs, remove cookie dough from fridge. Put some batter in the cup mold and shape it like shown below in the photo. The cookie cup coating should not be too thick or too thin.





6. Preheat the oven at 180 degree celcius for 10-15 minutes. Once the oven is preheated, place the cup molds in oven and bake it for 20-25 mins.
7. Once the cookies are baked, remove them from the oven.
8. Remov the cookies from the cup moulds when they are hot. Once removed let them cool down at room temperature.








9. Melt the cooking chocolate in microwave and apply it on the inside of the cookie cup.




 



10. Place these cups again in the fridge for 1 hr.
11. Serve this cool cookie cups with chilled milk, chocolate milkshake or icecream.

Baumkuchen (Tree cake)



Baumkuchen (Tree cake)

“Baum” is a German word for Tree and “kuchen” represents cake in English. As the name suggests the cake when baked to perfection and cut,  should depict the bark of the tree with “rings” or “layers” to it.

Ingredients:


For the cake:

Refined flour – ½ cup
Sugar – ½ cup
Melted and slightly browned butter – ½ cup
Eggs – 2 no.
Baking powder – ¼ tsp
Rum essence – ¼ tsp
Vanilla essence – 1/2 tsp
Milk – 2-3 tbsps.

For chocolate topping:

Cooking 70% dark Chocolate – 200 gms
Heavy cream – ½ cup
Gelatin – 1 tbsp.
Vanilla essence – ½ tsp
Rum essence – ¼ tsp
Hot Water – 3 tbsps.
Sugar – 1 tbsp.

Recipe:


Cake:

1.       Sieve the refined flour and baking powder together.
2.       In a bowl add 2 eggs, sugar, vanilla and rum essence. 




3.       Thoroughly beat this mixture with an egg whisk.
4.       Heat some water in a container. Place the egg mixture bowl on top of it (double boiler).The water in the bowl which is heating below should not touch the bowl which is placed over it and which contains the egg mixture. As this will result in scrambled egg, which we do not need.
5.       Beat this egg mixture on double boiler for 3 minutes then remove it from the double boiler.




6.       Add melted, slightly browned butter to this mixture. Make sure the butter is at room temperature, as hot butter, it will cook the eggs and we do not want that to happen! 
7.       Once everything is mixed well, add refined flour and baking powder together to it. Mix it with hand mixer.
8.       The consistency of this batter should be like that of a pancake batter. If the batter is too think add 2-3 tbsps.’ of milk to it.



9.       Preheat the oven at 200 degree Celsius for 10 minutes. Take a thick bottom cake pan. Grease it well with butter and some refined flour.





10.   Pour a 1 to 2 cup of batter in this cake pan. Spread it well. It should be evenly layered in this pan.
11.   Put this pan in the oven and let it cook for 5 minutes.




12.   After 5 mins, the cake should be slightly browned from top. Remove the pan and again pour half cup of batter on top of it. Spread it evenly over the baked cake. Gently tap the baking pan to remove air bubbles. Put it back into the oven for 5 minute of baking at the same temperature. Remove it and again pour 1 to 2 cup of batter over the second baked layer.





13.   Repeat the same process till you finish your all batter.
14.   Once the final layer of batter is baked for 5 mins, remove the cake and let it cool down on cooling rack for an hour.




15.   Meanwhile we can prepare the chocolate topping for this cake.

Chocolate topping:

1.  Heat ½ cup of cream in a sauce pan. Add chopped chocolate in it. Add sugar, vanilla and rum
essence in it.
2. Take ½ cup of water and mix gelatin in it. Make sure all the gelatin is properly dissolved in
     water.
3. Pour this gelatin water in to the chocolate mixture and mix well.
4. Once the cake is cooled down, pour this chocolate mixture on top of it. A thick layer of chocolate mixture should evenly spread all over the cake.




5. Refrigerate this cake for 2to 3 hours or until the chocolate is set over the cake.
6.Once the cake is set, remove it from the refrigerator.
7.”Baumkuchen” is ready to serve.

Guacamole



Guacamole is a Mexican deep.  You may eat it as a dip, spread it on a toast or add it as a sauce/ spread for sandwiches. It’s a very easy recipe. 


Ingredients:



Avocado – 1 no
Onion – 2 tblsp finely chopped
Tomato – 2 tblsp finely chopped
Garlic – 2-3 cloves grated
Jalapeno chilies from brine – 1-2 coarsely chopped
Lemon – ½ or 1 tsp lemon juice
Black pepper powder – 1 tsp
Salt as per taste
Olive oil – 1 tblsp



 

Recipe:

 

1.  Cut and deseed the avocado . Put it in a bowl.
2. Mash it with a fork. But do not make a smooth paste.
3. Add chopped onion, tomato, garlic, jalapeno chilies, black pepper powder and salt as per taste.
4. Mix well and add lemon juice and olive oil in it.
5. You can adjust the spicy or tanginess as per your taste.
6. Guacamole is ready to eat.


Tip:



1. Do no prepare guacamole ahead of time. Avocado has a tendency to turn black after some time.
2. Prepare it just before you are ready to eat it.

Cake Rusk

Hello Friends and my dear followers,

A bit disappointed being not able to post any recipe for a long time. I am finally back with a new post: Cake Rusk.

Ingredients:

Refined flour - 150 grams
Sugar - 150 grams
Butter - 150 grams
Eggs - 3 nos
Vanila essence - 2 tsps
Baking powder - 1 tsp
Mixed dry fruits - 4 tblsps
Salt a pinch

Recipe:

1. Sieve the refined flour, salt and baking powder together.
2. Add butter and sugar in a bowl. Bit this mixture with the hand mixer till the sugar gets dissolved properly.
3. Add 3 eggs and vanila essence to it. Bit it again for 2 minutes.
4. Later add refined flour mixture and mixed dry fruits in it.
5. Grease the baking pan with butter and refined flour this will prevent the cake from sticking to the bottom.
6. Meanwhile preheat the oven at 180 degree celcius for 10 minutes.
7. Once preheated, place the pan in oven for 15-20 minutes or till the cake is baked.
8. Once the cake is baked, remove it from the oven and let it cool down for 1 hour.
9. After 1 hour slice it in 1 inch pieces.



10. Again arrange those slices in a baking tray.



11. Put this tray in an oven at 150 degree celcius for 10-15 minutes. After 10-15 minutes switch off the oven and let the tray sit inside the oven for 10 minutes.
12. After 10 minutes remove the tray from oven. The cake rusk will be ready.
13. Enjoy these cake rusks with hot tea or as it is. It tastes good either ways.
