Dahi vada / Dahi bhalla

Ingredients:


Black gram (urad dal) = 2 cups
Yogurt = 1/2 kg
Green chilly = 2-3 nos
Ginger = 1 inch
Red chilly powder = 2 ts
Cumin powder = 2 tsp
Black salt as per taste
Black pepper = 2 tsp
Sugar = 1 tblsp
asophedita = 1 tsp
Salt as per taste
Oil for frying

Green chutney:

Green chilly = 3
Coriander = 1/2 cup
Mint = 1/4 cup
Ginger = 1 inch
Cumin = 1 tsp
Sugar = 1 tsp
black salt = 1 tsp
Chat masala = 1 tsp
salt as per taste
lemon water

Sweet chutney:

Tamarind = 1/2 cup
Jaggery = 1/2 cup
red chiiy powder = 1/2 tsp
cumin powder = 1 tsp
black salt = 1 tsp
salt as per taste

Recipe:


Green chutney:

1. Mix all ingredients mentioned under green chutney in grinder and grind it well. 
2. Taste the chutney and adjust the flavours as per your taste.

Sweet chutney:

1. Soak tamarind in warm water for 1 hour at least.
2. Once the tamartind is soaked, squeeze the tamarind pulp with your hand. 
3. Strain the pulp and add it in a pan. 
4. Add jaggery and all spices in it. 
5. keep stiring till jaggery dissolves in it. Adjust the flavors as per your taste.

Preparing batter:

1. Rinse urad dal and soak it overnight or for atleast 4-5 hrs.
2. Drain all water from dal and add it in grinder jar. Also add green chilies and ginger in it.
3. Do not add more water while grinding. Grind it to a smooth paste.
4. Remove the batter in a bowl and whisk it briskly to make it light and fluffy.




Preparing yogurt:

1. Pour yogurt in a bowl and beat it till smooth.
2. Add red chilly powder, cumin powder, black salt, black pepper powder,
   chat masala, sugar and salt as per taste. You can increase or decrease the quantity of spices as per your taste. 
3. Add chopped coriander in yogurt and keep it in fridge. 




Frying and soaking Vada:

1. Heat some oil for deep frying the vadas in kadai. 
2. When the oil is hot, add some batter in oil with the help of spoon or by hand. 
3. Fry the vada till golden brown in color. 




4. To soak the vada, take luke warm water in bowl. Add salt and asophedita in it.
5. Add fried vada in this water and let it soak for 5-10 mins. 



6. Once it is soaked fully, remove it from water and press it between your palms to remove excess water.



Assembling dahi vada:

1. In a bowl, place 2-2 vadas. Pour 4-5 tblsps of spiced yougurt on it. 
2. Top it with green chutney and sweet chutney.
3. Sprinkle some red chilly powder, cumin powder and chat masala on it.
4. Garnish it with chopped coriander and server chilled.

Kesar Peda

Ingredients:


Milk Powder - 1 Cup
Condensed milk - 1 cup
Ghee - 2-3 spoons
Cardamom powder - 1/2 tsp
Saffron - 2 tsp
Milk - 1/4 cup


Recipe:


1. Grind the saffron to powder and mix it in lukewarm milk.



2. Heat 2 spoons of ghee in a pan and add condensed milk to it.



3. Cook it on low flame till milk starts to boil.

4. Once milk starts to boil, add milk powder in it. Mix it will. There should not be any lumps left.




5. After mixing it well, add saffron milk to it.



6. Cook the mixture until it thickens and starts to ooze out ghee.



7. Switch off the gas and then place the mixture in a flat plate.



8. Once the mixture cools down, make small balls out of it. Press each ball and press it in the middle with your thumb.




9. Fill in the holes with a pinch of saffron and dry fruit mixture.

10. Kesar pedas are ready to serve.
